NEW VIDEO CLASSES
From his culinary classroom to your own kitchen
Chef Eric Crowley created and stars in a NEW cooking video series for students of all skill levels to learn remotely. He takes great pride in patiently focusing on each of his students to motivate them to reach their goals and develop superb culinary skills. This has equipped him to take his classroom virtual. The full twelve video series is available for purchase, and it comes with a PDF version of Chef Eric’s new cookbook. Individual videos with the accompanying chapters are also available for purchase. In creating this video series and writing his cookbook, Chef Eric hopes to provide his expertise to the rest of the world, not just those who have had the pleasure of working with him in person.
“People can derive a great deal from the art of cooking. The ultimate reward for me is seeing the sense of confidence and pure joy that my students experience when they master the life skill of cooking through my instruction, and to help other chefs follow in my footsteps and create their own businesses and careers,” Chef Eric.
To give you a quick overview of Chef Eric’s video series, he starts with Knife Skills. He covers the selection, use, sharpening, and care of knives – especially the Chef’s knife. From the julienne, mince, chop, and dice, he will teach you how to cut or shape vegetables. He includes three bonus recipes where you can demonstrate your new ability and practice your knife skills. After getting the basics down, he teaches All About Stocks in his second episode. Stocks are the foundation as a chef, and you will learn the secrets to a flavorful stock. In addition to the foundation of stocks, in episode three, Chef Eric provides a building-block to every new chef’s journey: Grand Sauces. Hollandaise, béchamel, and velouté sauces will open your eyes to the elegant power of butter and roux. Episode five through seven, you will learn the true art of breakfast foods, vegetables, potatoes, and pastas.
In episode eight, Chef Eric talks about a classic that is continually reinvented: appetizers. This episode focuses on dishes that can function as first courses in a multi-course meal and small items that can be served at a cocktail party or a small catered affair. Not only does Chef Eric teach about all different types of foods, but he covers the culinary art of cooking methods. Episode nine and ten, Dry Heat Cooking Methods and Moist Heat Cooking Methods, covers sautéing, roasting, stir-frying, braising, and poaching. Tying it all together, episode eleven offers three menus for easy but elegant meals. The chef at home will be able to practice and display everything that Chef Eric taught them, all from the comfort of their own kitchen. Dinner’s ready!
Some may argue that episode twelve is one of the most important ones: Easy Elegant Desserts. Chef Eric decides to satisfy the sweet tooth and demonstrates his favorite desserts. Chocolate rum mousse with homemade whipped cream, and crêpes with chocolate sauce and crème chantilly will make all your chocolate dreams come true. YUM!
